One of the best ways to be healthier and keep weight off is to cook and eat at home. Fortunately, it doesn’t have to be difficult or time-consuming. We’re not talking about preparing your grandmother’s Sunday dinner; it’s quite possible to have a healthy, delicious meal on the table in the time it takes to cook pasta.

At Cornell Health and Nutrition, we provide healthy cooking classes for small groups of people (up to 6) in your own kitchen, so it’s easy to replicate what you’ve been taught long after the teacher is gone. Kitchens with center islands are ideal, but we can work in almost any configuration where there is enough room for several cutting boards. We work at your skill level, whether you’re beginner or experienced. If what you usually make for dinner is reservations, we start with knife skills, so you feel confident no matter what you are chopping. You’ll learn how to identify the freshest, seasonal ingredients, and the quickest, healthiest way to prepare them. Then we’ll start with the basics: roast chicken, baked salmon, chicken soup, risotto, tomato sauce, and pork roast. Not only will you get these six basics – you’ll get five variations on each to expand your repertoire quickly – that’s 30 meals in just two healthy cooking classes. Best of all, you’ll gain the confidence and know-how to select recipes from magazines and books that you can try on your own. If you’ve been cooking meals for years, we’ll go straight to cooking your favorites – using some shortcuts to make things faster, and proven alternative ingredients to make them healthier but just as delicious. Plus, we’ve developed some sure-fire, tasty, fast recipes for weeknights. Cornell healthy cooking classes also cover things you can make when you have a little more time and freeze for fast weeknight meals with little fuss. In each class, you’ll learn to make three full meals.
